摘要食品安全一直是被受关注的民生问题之一,而严格的食品安全检测是其重要的保障手段。本文通过对国内外不同文献的归纳和总结,对目前色谱技术的发展及其在食品安全检测领域中的应用进行了比较全面的综述:阐述了国内外食品安全形势严峻,食品安全检测的重要地位--其技术水平的高低是决定食品能否得到安全保障的重要标志;分类介绍了检测技术中的色谱法的主要区别、工作原理及应用范围;提出根据不同的检测成分使用针对性的检测技术与方法,详细分析了各类色谱技术(凝胶色谱、气相色谱、液相色谱以及联用技术等)的优缺点与适用范围,强调了色谱技术在食品安全检测中重要的作用;最后对色谱技术在未来食品安全检测中的应用做出了展望,指出色谱技术逐渐趋向于高技术化、系列化和智能化的发展趋势。色谱技术在食品安全检测应用上的不断创新,从而在食品安全检测中将持续成为应用最为广泛、最为重要的方法。88534

Abstract  As one of the most concerned livelihood issues, food safety was guaranteed by district detection methods。 Based on different domestic and foreign literature, this article made a relatively comprehensive summary for current development of chromatographic techniques and their applications in the fields of food safety detection。 First of all, it sketched the grim domestic and international food safety situation and emphasized the importance of food safety detection-whose technique level was regarded as an important guarantee symbol for food safety。 Then, it briefly introduced food safety detection technologies (chemistry, biology and immunology, etc。) from scientific principles and technical characteristics。 Further, it discussed the major differences, principles and applications of the common chromatographic techniques (Gel Chromatography, Gas Chromatography, Liquid Chromatography and hyphenated techniques, etc。) in food detection。 Also it proposed the use of specific detection technique or detection method for target detected component/components in food。 Next, a detailed analysis of the advantages and disadvantages, scopes of application for various types of chromatographic techniques were detailed, also it emphasized the importance of chromatographic techniques in food safety detection。 Last but not least, it made a prospect for application of Chromatographic techniques in food detection in the future and indicated that chromatographic techniques gradually moving to the development trends of high-tech, serialization and intelligence。 Chromatography technology kept innovation in food safety detection applications, it would continue to be the most widely used, the most important method in food safety detection methods。
