摘要:目的研究鱼鳞制备物作为膳食纤维和食品包装纸的可行性。方法通过测定鱼鳞制备物对水、糖类、油脂吸附能力,研究鱼鳞制备物作为膳食纤维在食品及药品方面的应用;通过红外光谱和紫外光谱分析分析鱼鳞制备物的组成,通过电镜扫描测定鱼鳞制备物的外观形态,通过万能试验机测定鱼鳞制备物的最大应力,研究鱼鳞制备物在食品包装纸方面的应用。结果鱼鳞制备物的平均持水力为19。28g/g,平均持油力为23。17g/g,平均葡萄糖吸附力为43。54mg/g,60min时葡萄糖透析延迟指数为46,对水和油脂有较强的吸附能力,可以抑制人体对葡萄糖和油脂的吸收;由红外光谱可知鱼鳞制备物主要由蛋白质和羟基磷灰石组成,紫外光谱显示出鱼鳞制备物有高度有序的纤维晶体结构,电镜扫描显示出鱼鳞纸有较紧密的微观结构,最大应力的测试显示出鱼鳞纸有较大的物理强度。结论鱼鳞作为廉价的原料,可以较为容易地收集,经过一定的加工,作为膳食纤维加入到食品之中,可以起到吸附油脂,减少葡萄糖吸收的作用,有益于现代人的身体健康。鱼鳞制备物的纤维构造具有一定的强度,安全卫生可以制作食品包装纸。91510
