摘要:运用发光二极管(light emitting diode,LED)精准调控光质,以白光为对照,研究不同光质(蓝光、UV-A、UV-B)对赤豆芽苗菜生长和营养品质的影响。结果表明:与白光对比时,不同光质处理均显著抑制赤豆芽苗菜株高生长,并且紫外光抑制程度更大,尤其是UV-B,但不同光质处理对赤豆芽苗菜根长、茎粗和干重无显著影响;此外,UV-B对赤豆芽苗菜含水率的影响最大。UV-A能提高赤豆芽苗菜抗坏血酸含量,UV-B提高赤豆芽苗菜可溶性糖含量,蓝光和UV-B增加赤豆芽苗菜可溶性蛋白含量,蓝光、UV-A和UV-B均增加总酚含量尤其UV-B显著增加,三者均能显著提高赤豆芽苗菜总类黄酮含量。综合看来,UV-B最有利于提高赤豆芽苗菜营养品质。37301

Effects of light quality on the nutritional quality of adzuki bean sprouts
Abstract:Light emitting diode(LED)was applied to accurately modulate light quality. To explore the effects of different light qualities on the growth and nutritional quality of adzuki bean sprouts, the sprouts were cultured under three kinds of LED light radiation: blue light, UV-A and UV-B in comparison with white light.The results indicated that compared with cultivation in white light, every light quality decreases the plant height of adzuki bean sprouts significantly, and the degree of UV inhibition is more obvious, especially in UV-B, but effects of different light qualities on root length, stem diameter and dry weight have no significant difference; in addition, UV-B has the greatest influence on the water content of adzuki bean sprouts. UV-A increases the content of ascorbic acid of adzuki bean sprouts, UV-B improves the content of soluble sugar of adzuki bean sprouts, blue light and UV-B increase the content of soluble protein, blue light、UV-A and UV-B all increase the content of total phenol, particularly rich in UV-B; All of the three different light qualities increase the content of flavonoids significantly. In general, UV-B is the most conducive to improve the nutritional quality of adzuki bean sprouts.

引言
赤豆芽苗除含有较丰富的钙、磷 、铁 、钾等矿物质外,还含有多种文生素,尤以文生素B1含量为高。而且赤豆芽苗不管是食用短芽抑或是芽苗,都鲜香脆嫩,独具风,经常食用不仅增强消化能力,降低肠道疾病发生的风险,还利于文持人体血液的酸碱平衡,益于身体健康,是种众所周知的具有药用价值的芽苗菜[1]。
 主要环境因子之一的光质对植物生长发育存在广泛的调节作用,与此同时,植物幼苗个体发育本身也对光极其敏感。赤豆芽苗菜作为植物幼苗同样经历了个体发育和光形态建成过程,因而光是其生长发育的重要环境因子,不仅是光合作用的重要环境信号还为光合作用提供能量,其适宜程度直接与芽苗菜的产量及品质相关联[2]。而且光环境调控技术采用物理手段从光照度、光质和光周期三方面调控植物生长,几乎无污染,符合绿色农业的要求,同时打破了自然条件的限制,因具备诸多优势而成为设施栽培领域热门研究新方向。 光质对赤豆芽苗菜营养品质的影响:http://www.youerw.com/shengwu/lunwen_36035.html
