摘要:黄酮类化合物作为苦荞中重要的生物活性物质,在萌发过程中会随着萌发天数的增加而不断增加,研究表明,光照条件对于萌发过程中黄酮类化合物的变化具有重要作用,本文以萌发3 d的苦荞麦为研究对象,以黑暗条件为空白,重点研究了在相同照射时间条件下,不同光质(红光、黄光、蓝光、绿光、紫外光A(356nm)、紫外光C(254nm)、自然光)对萌发苦荞中黄酮含量,以及相关酶活性的影响。实验结果表明:苯丙氨酸解氨酶(PAL),查尔酮异构酶(CHI) 是黄酮合成的两个关键酶,与空白样品比较,不同光质均可提高PAL及CHI的活性,其中,紫外C对PAL、CHI的促进最大,红光对PAL、CHI的促进作用最小。光质对总黄酮的影响变化规律,与对酶类变化的影响相同,光质均提高了芦丁降解酶(RDEs)的酶活力,其中,在绿光的影响下,RDEs的酶活力最高,而蓝光对其促进作用最小。此外,抗氧化实验研究表明:紫外C对促进1,1-二苯基-2-三硝基苯肼(DPPH)自由基清除能力影响最大,红光对其影响最小。24579

Effects of different light conditions on thegermination of Buckwheat
Abstract:This paper summarizes the composition and synthetic approaches of flavonoids in
buckwheat, as well as the role of some enzymes in biological metabolism synthesis.In this
experiment, color film and ultraviolet lamp of modulated wavelength were used to produce
different light quality for treating germinate tartary buckwheat. Effects of light quality(red light,
yellow light, green light, white light, blue light, UV-A(356nm) and UV-C(254nm))on flavonoids,
antioxidant properties and relative enzymes of flavonoids in germinated tartary buckwheat were
investigated, and dark was set as Compared with control. To knew the buckwheat flavonoids
contentIn in the process of germination, and the influence of related enzymes.
L- phenylalaninammonia-lyase and chalcone isomerase are key to the synthesis of the
flavonoids in buckwheat. all the seven light quality significantly increased the content of total
flavonoids and rutin, and DPPH radical scavenging activity. UV-C had the highest influence on
them than any other light, and red light had the minimum influence on the L -
phenylalaninammonia-lyase, chalcone isomerase and flavonoids. Effectsof light quality on key enzymes (PAL, CHI) of flavonoids biosynthesis were similar to them on total flavonoids. Green
light did most favor for increasing RDEs activity and quercetin content.
